Will trade fishing Kayak for canoe

I have a real nice Ocean 13 prowler angler edition Kayak , Sit on top, 13 foot. dark green, includes two rodholders, LL Bean after market extra thick padded seat. I will trade the kayak for a nice light weight canoe. Prefer 14' to 16'. I will sell the kayak for $600 firm. -
Are the salmon caught in the Genesee river this time of year (Oct.) any good to eat and is it safe? I've read that spawing salmon is terrible to eat . Is there anything special to know about cleaning it and preparation. Thanks!
