pan fish

I met a guy that that swears by this. if you like tuna fish etc. any small pan fish you catch immediately place in a bucket of ice water. upon returning home after dressing the skin should peel off with a pair of duck bill pliers, the ice water makes the skin peel easy. from that point put the fish a pot of boiling water till the meat flakes of with a fork. it works great especially good with spring suckers which are very bony any way, same goes for pickrel. The bones stay intact and all you have is flaked white meat. it makes great fish cakes! It does work!.
