What's the best probe for keeping my set up simple? 
 

I don't want to mount a fish hawk or another display, would rather use an app on my phone. Is it possible to run a probe on a downrigger sending the data straight to your phone? Is there a way to hook it up to a Garmin that I already use? 
 

I've seen smart troll, fish hawk, and Scotty seeker. What are people recommending? For frame of reference this is for a 17 foot personal use boat.

Smart Troll is far and above all the others for versatility and ease of use. It not only performs like the other systems on your riggers, it is the ONLY system that allows you to know exactly where your divers are running; depth and temperature! It also gives you speed at the ball when used with the paddlewheel attachment. Transmits to any android device (may now have Iphone capability as well, not sure).  The videos linked below tells you everything you need to know.

Given your requirements the Smart Troll might be your answer. I have very little experience with the paddle wheel for speed, but we use 4 probes every weekend on our divers, which speaks to its versatility. Only caveat is you need to be running on Android.
