King too dark too eat?

Thanks meat was pale but not terribly mushy. Making jerky / candy out of it

The meat for fall kings like that tends to get lean and bland still takes on flavors of cooking well but little flavor of its own so its a personal preference thing and is a good time to do bolder marinades and sauces
