SMOKED CALAFORNIA SALMON (Stan)

Recommended Posts

first you need to brine the salmon also remove the entrials for uniform drying.then take the salmon and one 2lb bag of mesquite smoking chips to the local laundry place ,throw in up to 4 salmon max (25 lbrs) in the dryer and turn on high for 3 hours keep adding chips as needed.this also works for venison jerky and smoked ducks.(no need to remove feathers).id suggest you could do this at home but the steamed salmon in the dishwasher ticked the wife off so bad that i'm not allowed to cook at home anymore.

Hey Ray - You gotta try the dishwasher steaming. I was surprised, it works pretty good. When my wife went shopping Saturday afternoon, I rinsed out the soap dispenser really well then filled it with lemon juice. Cycled it twice then refilled it with L.J. & then put a piece of wrapped up fish in for the cycle.

Stan - You Cailifornia boys have a good one there. Thanx,

Tom B.

BTW - Thanx for the sunshine yesterday. I got the boat winterized and some leaves raked.

Some how he wrapper in butcher paper , then ran it throught the dishwasher twice..What can I say..Now his wife is upset with him. I am packed and Headed to Oregon at 5;30a, for big lake trout ( mackinaw )..Good luck Ray . Wait till you get a deer or a bear and tell you how to make sausage... By the way Ray--Joe the plumer cooks his salmon this way :D
