Yea, looks great, I went to culinary school and appearance is a big part of the game, but I bet the tast was as good as it looks. A plus for the dish!!!

I use brown sugar, apple cider canning salt and a pinch of insta cure, the pink color to give the fish a pinkish color and to lessen the salt content, works well for whole chickens also, the feather type. LOL
